Fresh Golden Delicious apples, a yellow-gold variety with thin, tender skin and sweet, low-acid flesh. Despite the name, they are unrelated to Red Delicious: Golden Delicious began as a chance seedling found on a West Virginia hillside around 1905 and went on to parent many modern apples, including Gala and Jonagold. The honeyed flesh is good raw out of hand, and because it keeps its sweetness and holds its shape in the oven, it is a standard choice for pies, tarts, baked apples, and applesauce. It also grates well into cakes and slaws. Stored cold, the apples keep for weeks. A versatile all-purpose apple for both the fruit bowl and the baking pan.
