Note: Grass-fed beef is typically not graded on the USDA's standard Prime, Choice, and Select scale, which was designed for grain-finished animals and doesn't translate well across different raising practices. Our local processors use an A, B, C grading system that evaluates the fat content and quality of each animal, and our supply comes from animals consistently rated A, so quality and flavor are at their prime.
