Organic Butternut squash is a tan-skinned winter squash shaped like a long bell, with a solid, seedless neck and a small seed cavity at the bulbous end. When butternut was first developed, its flavor was described to be as “smooth as butter and sweet as a nut”, hence its name, butternut!
Once roasted, butternut squash develops a dense, moist flesh with a mild, sweet, nutty taste. Unlike most produce, butternut squash actually improves in storage, since the starch inside slowly converts to sugar over time, making an older squash sweeter and creamier than a fresh one. Peel and cube it for soups and roasting, halve and roast it with the skin on for an easy side, or puree it into a smooth soup or pasta filling. It pairs especially well with sage, brown butter, nutmeg, and maple.
