Quirk cucumbers set fruit without pollination, so each one grows seedless, with a thin skin and a crisp, sweet flavor that's milder than a standard slicing cucumber. Their small size, about 2 to 3 inches long, makes them easy to eat whole as a snack, and their thin skin takes to pickling brine quickly, so they hold up well as a quick-pickle or refrigerator pickle.
