Short Creek Farm's Salami Roni is a dry-cured, pepperoni-style salami made with heritage breed pork and grass-fed beef. The meat is seasoned with paprika, Kashmiri chili, and fennel seed before being naturally fermented and aged. This shelf-stable meat is crafted with pork raised without antibiotics or added hormones. The dry salami can be sliced and served on charcuterie and cheese boards alongside hard cheeses, crackers, and pickled vegetables. It can also be layered into Italian sub sandwiches, diced and tossed into pasta salads, or used as a topping for homemade pizzas. The cured meat can be served with olives, mustard, and crusty bread, or folded into a calzone with mozzarella and ricotta.
